Fungi Girls - Barbeque Tofu and Pepper wraps

Texan lo-fi pysch Warriors Fungi Girls have given us an insight into their culinary lives with this tofu wrap recipe. Im always enviable of those who get to enjoy the sun and this recipe falls in that jealous category with no exception. As i type this I'm sat in a muggy heat cradling a cup of tea like a true Brit but for those ore ambitious ones of us. Enjoy

Barbeque Tofu & Pepper Wraps
Ingredients:
1 block of firm or extra firm tofu
1 medium bell pepper
1/2 cup bbq sauce (preferably Sweet Baby Ray's brand)
1 large or 2 small jalapeno peppers (or habanero peppers if you really like it spicy!)
3-5 tortillas or wraps

Preparation: Press your tofu then cut the block into bite size cubes. Chop the peppers into small slices then mix together in one pile (but don't get rid of the jalapeno seeds!). Fry your tofu cubes in olive oil on medium heat first. When the cubes start to turn a golden brown, add in all the peppers with the jalapeno seeds to give it a little bit more kick than with just the peppers. Fry the peppers for about a minute or so with the tofu then take the pan off of the stove and drain the oil out of it. After the oil is drained, place the pan back onto the stove then add the barbeque sauce. Stir around until the peppers and tofu are all fully covered in the sauce and the sauce is has become hot. Take the pan off the stove, heat your tortillas, then put the tofu, peppers, and sauce inside the tortillas. Fold like a burrito and enjoy!

About: This is a quick and easy recipe to make, no real expertise in cooking is needed. Jacob (plays guitar & sings) and I became vegetarians a few years ago, so we started trying different things with tofu. This recipe really just came about due to lack of other ingredients for other recipes and using what I already had in the fridge. It made sense when I first made it because I really love barbeque sauce on a lot of different things and I'm also really big on spicy foods (maybe it's the Texan in me?). Since making this once for the other guys after practice one day and them liking it, it kind of became a regular thing before and after practicing for a while. One thing I must say about it, is when I have explained to people exactly what it is, none of them are expecting much out of it. It sounds like it doesn't make much sense and won't be very good, but once people try it they've always loved it and I hope everyone planning to make this does too!
